XO Baking Co. is the culinary inspiration of principal owner, Lindsey Deitsch. With a lifelong love for the art of baking, Lindsey set out on a mission to create decadent desserts, using only the highest-quality ingredients and the perfect blend of wholesome, gluten-free flours. 
Diagnosed with Celiac disease, (a digestive condition caused by the consumption of gluten) Lindsey became determined to transform all of her recipes into gluten-free delicacies. The result? An unparalleled collection of baked goods without the gluten−but not without the great taste!
Today, XO Baking Co. offers a wide array of certified, gluten-free gems with mouth-watering taste and texture. And unlike many gluten-free products on the market today, XO Baking Co.’s line is made with a specialized blend of gluten free flours, unique to the marketplace today.

Lindsey Deitsch is a Certified Health and Nutrition Coach, as well as a professional chef and baker. An accomplished marathon runner for over 11 years, Lindsey knows the important role a healthy diet plays for an athlete. She has used her knowledge to teach others the role a balanced diet and healthy lifestyle play in overall wellness.
Lindsey received her Bachelor’s Degree in Public Health from UC Berkeley. She graduated from the Westlake Culinary Institute, where she studied under esteemed Chef, Cecilia de Castro. She worked for 4 years as a Nutritionist at UCLA’s Clinical Research Center, and received her training and certification as a Health Coach from the Institute for Integrative Nutrition in New York City.
